You need:
1 – Chicken, boneless or with bone. With bone is cheaper but you have to cut it carefully.
2 – Vegetables – tomatoes, Onion, Peppers for sure. You can add variations from there
3 – Tortillas – you can use any you want, just make sure they taste fabulous
4 – sour cream
5 – salsa
6 – powdered flavorings
7 – Ginger
8 – Garlic
9 – Cheese, shredded (MOZZARELLA AND CHEDDAR WORKS BEST)
The Chicken
Take your chicken and cut it up. Keep in mind its going in between two tortillas. Get a pan, and coat the bottom in oil. Start cooking your chicken, and when its all white on the outside coat it with the powdered flavorings. I use the taco bell one, cause its so awesome.
The Tortillas
Cut open the package.
The Vegetables
Dice up your onions, peppers, and tomatoes. Add your vegetables to the chicken pan. Add a little bit of minced ginger and garlic. Stir it!
Building the Apparatus
Preheat the oven to 350. When everything is nice and cooked, lay one tortilla out on your cooking pan or baking sheet or whatever you use. Either spoon or use some handy CLAMPS to move the vegetables and chicken onto this tortilla. You are doing this to avoid the oil because you dont want soggy quesadillas. You want to fill up the tortillas with lots of chicken goodness, but don’t go straight to the edge, leave some space. Sprinkle your shredded cheese on top of this. Dont use TOO much cause it will kill the taste of the chicken. Place a second tortilla over top this whole mess.
Cooking Time
Throw this in the oven, which will be nice and hot by now. Since all the meat and vegetables are cooked, all you want is the cheese to melt. You can lift up the edge of the tortilla to keep checking until you see that all the cheese is melted. You can even leave it in a little extra to get crispy edges.
Last Step
Cut up your chicken quesadilla in a fashionable style. Make sure to serve with lots of sour cream and salsa. You can mix in any leftover stuff form the pan with the salsa for added FLAVOR.
Leftovers!
You will probably have leftovers cause these are pretty filling. Store everything in the fridge separately, then all you have to do is reheat the chicken before making a new quesadilla.
